Pumpkin Pancakes

These are fluffy and delicious with just the right amount of Pumpkin flavor & spice. Defintiely fitting for the Fall / Pumpkin Spice Season but can be enjoyed year round.

Serves 2 (Makes about 8 pancakes)


 
 

Ingredients

1 1/2 cups (180g) Flour

1 Tbsp (15g) Baking Powder

4 Tbsp (60g) Sugar

1 1/4 tsp (6g) Pumpkin Spice

Pinch of Salt

1 cup + 1 Tbsp (251ml) Unsweetened Plant Milk

1 Tbsp (15ml) Apple Cider Vinegar

1 tsp (5ml) Vanilla

1/2 cup (113g) Pumpkin Puree

2 Tbsp (30g) Vegan Butter or Oil for cooking

Vegan Butter & Maple Syrup for serving

Directions

1. In a large bowl mix together all of the dry ingredients and set aside

2. Mix together all of the wet ingredients and then pour them into the dry ingredients.

3. Mix the batter until well combined but don’t over mix. Let the batter rest for 3-5 minutes.

4. On medium heat in a large pan or non stick skillet pour out 1/3 cup of the batter at a time. Let the Pancake cook until you start to see bubbles form on the top (about 2 minutes) before flipping. Cook another 2 minutes until browned.

5. Serve with plenty of vegan butter and maple syrup.
